KAF Chewy Chocolate Chip Cookie

Was at a work event, and people asked if I could make chocolate chip cookies. I can!

Pulled from the most excellent KAF revised cookie companion

  • 1 1/2 stick butter
  • 2/3 c brown sugar
  • 2/3 c sugar
  • 2 Tablespoons corn syrup
  • 1 Tablespoon vinegar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 2 1/4 cups flour
  • 510g chocolate chips

Cream butter, sugar, corn syrup and vinegar. Add eggs one at a time, mixing between each addition. Add Vanilla, salt, baking powder and soda. Fold in flour and chips.

Bake for 10 minutes at 375.

KAF Chewy Oatmeal Cookie

Bought the revised KAF Cookie Companion. Normally, I wouldn’t make these as they have a ton of ingredients, but… why not. Now that I’ve made them, well, that’s oatmeal cookies sorted.

  • 1 stick butter
  • 1/2 cup shortening
  • 1/2 cup sugar
  • 1 cup brown sugar
  • 2 teaspoon vanilla
  • 3/4 teaspoon cinnamon
  • 1/8 teaspoon cloves
  • 1/4 teaspoon nutmeg
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 egg
  • 6 Tablespoons corn syrup
  • 2 Tablespoons milk
  • 3 cups oats
  • 1 1/2 cups flour
  • 1 cup raisins
  • 1 cup chopped pecans

Cream butter, shortening and both sugars. Add the vanilla to baking soda and mix. Add egg, corn syrup, and milk, then mix. Fold in oats, flour, raisins and pecans.

Bake for 11 minutes at 375.

“Mancatcher Brownies”

Made a recipe from reddit. Looked interesting… and they came out well.

  • 3 sticks butter
  • 1 1/2 cups cocoa powder
  • 2 cups sugar
  • 2 cups brown sugar
  • 6 eggs
  • 2 cups flour
  • 1 teaspoon vanilla
  • 1 teaspoon salt

(or follow the recipe in the picture, your call)

Melt butter, mix in cocoa powder. Beat eggs, add both sugars, beat again. Add flour, salt, vanilla, and chocolate/butter mix. Place in a greased 9″x13″ pan and bake for 45 minutes at 350.

Chocolate Poundcake

  • 2sticks butter
  • 25g cocoa powder
  • 200g AP flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 4 eggs
  • 225g sugar

Pre-heat oven to 325. Warm butter to room temp. Mix cocoa, flour, cinnamon, baking powder and salt. Add butter and cream. Add eggs and mix, scraping the side of the bowl. Add sugar and mix until incorporated. Pour batter into loaf pan and bake for 60 minutes.
